To too: sorry to offend with the coarse language. But honestly, my language could be a lot friggin' worse (I only used the F-word once in this post!). This is a hockey and politics blog, after all. Thanks for stopping by, and I hope you like my bread recipe! And go Wings! (They just clinched their series vs. the flames in double overtime.)

Yum. We love homemade bread here, too... couldn't think of any habit or addiction I'm happier to have! Your recipe looks fantastic. Here's another option..
It takes about 2 1/2 hours, start-to-finish:
4 C whole wheat flour (or, part ww flour + 1 C oat bran)
4 C white flour
1/3 C dried buttermilk (or use 1/4 C in the water mixture)
1 Tblsp salt
3 C water
2 Tblsp (or 2 pkg) yeast
1/3 C honey

Combine water, yeast & honey to let yeast start dissolving.
Combine dry ingredients.
Mix wet + dry together for about 5-10 minutes with a dough hook on a mixer, or 8-12 minutes by hand. Stop when a very soft & pliable dough forms.
Cover & let rise to double - about 1+ hour.
Deflate, cover & let rise to double - about 30-45 minutes.
Deflate, split into 2 med-large, greased loaf pans. Cover and let rise while preheating oven to 350.
Bake 25-30 minutes, until it sounds "hollow" when tapped.
yum.

Have you tried Laurel's Kitchen Bread Book? If you want to learn how to make 100% whole wheat bread that is wonderful and light this is *the* book to use. It tells you exactly how to do it without using gluten. I highly recommend it! That said, I'm baking bread much less frequently these days....though I did make homemade pizza for a crowd last night.

I just stumbled on your blog just now--I enjoyed the pics of the places on Killingsworth. You must live near me--those are in my neighborhood.
